Quick and Easy for Busy Families

How many of us Mom's feel guilty that we can't always put a nutritious meal on the table. If you are like my family you don't know if you are washing or hanging out half the time. Most family schedules are so hectic we do good to grab a fast food burger must less prepare a healthy dinner. I have a quick and inexpensive menu for you to try. This menu will serve a family of three. If you need to serve more just double the amounts. Healthy eating made easy.  
I serve this with a can of lima beans (add a teaspoon of oil and little salt) and a pkg. of Lipton Pasta Sides, Alfredo flavor (follow directions on pkg.) add a hot roll and dinner is served!
Helpful Hint: Start beans cooking, next begin pasta, preheat oven for rolls. Mix casserole and microwave, prepare cobbler, brown rolls and pop cobbler in oven while you enjoy dinner then serve cobbler fresh and hot.  When rolls are done dinner is served!
Let's get cookin.

Chicken Casserole
1 sm. can chicken (white-breast)
1 can cream of chicken soup
1 pkg. Ritz crackers (crushed)
In a small, microwave safe dish put half the package of crushed crackers. Mix together in a separate bowl the chicken soup and can chicken (do not drain chicken). Pour mixture over crackers and top with rest of crushed crackers. Microwave on high until hot and bubbly.(5-6 min.)

Gertrude's Peach Cobbler
1 can sliced peaches (in heavy syrup)
3/4 c. milk
3/4 c. sugar
3/4 c flour (self rising)
3/4 stick butter (melted)

Preheat oven to 300. Put butter  in a 8 x 8 oven safe dish. Microwave until melted. (do not stir) Mix sugar, milk and flour together and gently pour over butter. (back and for the motion) With fingers gently place peaches into mixture. Now pour peach juice from can over all. Bake until top is golden brown.(20-30 min.) Add a scoop of ice cream when serving and you will be Mother of the Year!
